    Finely chop the onion, parsley and fresh mint. Mince the lamb finely if needed to ensure it's very finely ground.

    Mix the ground lamb, onion, parsley, mint, cumin, paprika, cayenne pepper, salt, pepper and egg in a bowl. Mix well.

    Wet your hands. Take a handful of the mixture and shape it around a metal skewer. Make 4-6 koftas.

    Cook the koftas on a very hot grill or in a skillet for 8-10 minutes, turning regularly, until fully cooked.
