Boil water for the rice. Rinse the rice and cook according to package instructions (approximately 12-15 minutes). Once cooked, set aside.

Dice the carrots, cut the broccoli into small florets, and slice the onion thinly. Mince the garlic and ginger.

Heat the oil in the wok or pan. Cook the shrimp for 2-3 minutes until they change color. Remove them.
