Knead the flour with warm water, yogurt, and salt until smooth. Let rest for 15 minutes.

Cook the potatoes, mash them, and mix with chickpeas, onion, ginger, cilantro, green chili, cumin, garam masala, and turmeric.

Divide the dough into 8 portions and roll out on a floured surface into 10 cm squares.

Heat the oil to 180°C. Fold each puri into a triangle or portion, add filling to the center before folding closed.
