Korean Beef Yukhoe with Asian Pear and Sesame
The quintessential Korean beef tartare: raw beef seasoned with sesame oil and soy sauce, paired with crisp julienned Asian pear. A perfect balance of umami and freshness.

Ingredients
- 300 g beef tenderloin
- 1 piece Asian pear
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp sesame seeds
- 1 piece cucumber
Instructions
Step 1
Cut the beef tenderloin into thin, even julienne strips. Chill.
Step 2
Peel the Asian pear and cut into fine julienne. Cut the cucumber into julienne as well.
Step 3
Mix the beef with soy sauce and sesame oil. Mound in the center, surround with pear and cucumber julienne. Sprinkle with sesame seeds.
