Cauliflower Wraps with Harissa Turkey
Homemade cauliflower flatbreads filled with grilled harissa turkey, zucchini and fresh tomato. A gluten-free North African wrap, perfectly spiced.

Ingredients
- 280 g turkey breast cutlets
- 300 g cauliflower
- 1 piece zucchini
- 1 piece tomato
- 1 tbsp harissa
- 1 piece egg
- 1 tbsp olive oil
Instructions
Step 1
Pulse the cauliflower into fine crumbles, mix with beaten egg. Form 4 flatbreads and cook in a skillet 4 minutes per side.
Step 2
Coat the turkey with harissa and grill in a skillet for 8 minutes. Slice the zucchini into ribbons and the tomato into rounds.
Step 3
Fill each cauliflower flatbread with harissa turkey, zucchini ribbons and tomato slices. Roll and serve.
