Thai Lettuce Wraps with Shrimp and Mint
Stir-fried shrimp with chili and lemongrass nestled in crisp lettuce leaves with cucumber and fresh mint. A modern take on classic Thai larb served as wraps.

Ingredients
- 300 g peeled shrimp
- 8 leaves butter lettuce leaves
- 1 piece cucumber
- 15 leaves fresh mint
- 1 stalk lemongrass
- 2 tbsp fish sauce
- 1 piece fresh red chili
Instructions
Step 1
Finely mince the lemongrass and chili. Cut the cucumber into thin batons.
Step 2
Sear the shrimp in a hot skillet with the lemongrass and chili. Cook for 3 minutes, then deglaze with fish sauce.
Step 3
Fill each lettuce leaf with shrimp, cucumber, and fresh mint. Roll and serve.
