Romaine Lettuce Wraps with Marinated Tofu and Grilled Eggplant
Romaine lettuce leaves filled with herb-marinated tofu and tender grilled eggplant. A light Provençal wrap celebrating the flavors of southern France.

Ingredients
- 300 g Firm tofu
- 1 piece Romaine lettuce
- 1 piece Eggplant
- 1 tbsp Herbes de Provence
- 30 g Sun-dried tomatoes
- 2 tbsp Olive oil
Instructions
Step 1
Cut the tofu into 1 cm slices and the eggplant into rounds. Mix the olive oil with the Herbes de Provence and brush onto the tofu and eggplant.
Step 2
Grill the tofu and eggplant in a grill pan over medium-high heat, 4 minutes on each side.
Step 3
Roughly chop the sun-dried tomatoes.
Step 4
Arrange the grilled tofu, eggplant, and sun-dried tomatoes in the lettuce leaves. Roll and serve warm.
