Iceberg Lettuce Wraps with Mozzarella, Pesto and Zucchini
Crispy iceberg lettuce leaves filled with melting mozzarella, grilled zucchini and a drizzle of homemade pesto. A quick, light Italian-inspired wrap.

Ingredients
- 250 g Mozzarella
- 1 piece Iceberg lettuce
- 1 piece Zucchini
- 100 g Cherry tomatoes
- 2 tbsp Pesto
- 1 tbsp Olive oil
Instructions
Step 1
Slice the zucchini into thin ribbons using a vegetable peeler. Cut the mozzarella into slices and halve the cherry tomatoes.
Step 2
Heat the oil in a grill pan or regular skillet. Grill the zucchini ribbons for 2 minutes on each side.
Step 3
Detach the large lettuce leaves. Spread a little pesto on each leaf.
Step 4
Fill with mozzarella slices, grilled zucchini ribbons and cherry tomatoes. Roll and serve immediately.
