Collard Green Wraps with Smoked Tofu and Peppers
Tender and resilient collard green leaves filled with pan-seared smoked tofu, colorful bell peppers, and a light mustard sauce. A Southern American wrap reimagined as a plant-based delight.

Ingredients
- 300 g smoked tofu
- 6 leaves collard green leaves
- 1 piece red bell pepper
- 1 piece yellow bell pepper
- 1 tbsp Dijon mustard
- 1 tbsp olive oil
Instructions
Step 1
Cut the smoked tofu into sticks. Slice the peppers into thin strips.
Step 2
Blanch the collard green leaves for 2 minutes in boiling water, drain and remove the thick center vein.
Step 3
Heat the olive oil in a skillet over high heat. Sear the smoked tofu and peppers together for 6 minutes, stirring occasionally.
Step 4
Spread each collard green leaf with mustard, fill with the tofu-pepper mixture, roll tightly and serve.
