Kale Wraps with BBQ Tempeh and Light Coleslaw
Crispy kale leaves wrapped around crumbled tempeh caramelized barbecue-style, served with a tangy crunchy coleslaw made with apple cider vinegar. A smoky, plant-based Tex-Mex delight.

Ingredients
- 250 g tempeh
- 6 leaves kale
- 1 piece carrot
- 100 g green cabbage
- 1 tsp smoked paprika
- 1 tbsp apple cider vinegar
- 2 tbsp tomato sauce
Instructions
Step 1
Crumble the tempeh with a fork. Grate the carrot and finely slice the green cabbage.
Step 2
Mix the shredded cabbage and carrot with the apple cider vinegar for a light coleslaw. Set aside.
Step 3
Sauté the crumbled tempeh in a dry pan over high heat for 5 minutes. Add the tomato sauce and smoked paprika, cook for 3 minutes while stirring.
Step 4
Blanch the kale leaves for 30 seconds. Fill with BBQ tempeh and coleslaw, roll and serve.
