Crispy Smoked Tofu Stir-Fry with Asparagus and Shiitake Mushrooms
Crispy smoked tofu paired with green asparagus and shiitake mushrooms in an umami-rich sauce. An elegant fusion-inspired stir-fry with French-Japanese influences.

Ingredients
- 300 g smoked tofu
- 200 g green asparagus
- 150 g shiitake mushrooms
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp olive oil
Instructions
Step 1
Cut the smoked tofu into batons. Break off the tough ends of the asparagus and cut into 4 cm pieces. Slice the shiitake mushrooms.
Step 2
Heat the oil in a wok over high heat. Sear the tofu batons for 4 minutes until golden and crispy.
Step 3
Add the asparagus and shiitake mushrooms. Stir-fry for 6 minutes, stirring regularly.
Step 4
Deglaze with soy sauce and rice vinegar. Toss for 1 minute and serve.
