Stir-Fried Noodles with Vegetables
A tasty and quick Asian dish with stir-fried noodles, crispy lentils, and fresh vegetables from your kitchen.

Ingredients
- 250 g Pasta
- 150 g Cooked red lentils
- 1 small Zucchini
- 50 g Salad greens
- 3 tbsp Olive oil
- 3 tbsp Soy sauce
- 1 2cm piece Fresh ginger
- 2 clove Garlic
- 1 tbsp Rice vinegar
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the pasta according to package directions, drain, and set aside.
Step 2
Meanwhile, finely mince the garlic and ginger, cut the zucchini into sticks.
Step 3
Heat the wok over high heat with 2 tbsp of oil.
Step 4
Add the garlic and ginger, sauté for 30 seconds to release the aroma.
Step 5
Add the zucchini and stir-fry for 3-4 minutes.
Step 6
Add the cooked pasta and lentils to the wok, toss well.
Step 7
Add the soy sauce, vinegar, and remaining oil, toss quickly for 2 minutes.
Step 8
Season with salt and pepper to taste, serve immediately.
