Mediterranean-Style Cod Stir-Fry with Zucchini and Olives
Chunks of cod sautéed with tender zucchini, cherry tomatoes, and black olives. A sunny, Mediterranean-inspired dish.

Ingredients
- 300 g cod fillet
- 2 piece zucchini
- 150 g cherry tomatoes
- 50 g pitted black olives
- 2 clove garlic
- 1 tsp Herbes de Provence
Instructions
Step 1
Cut the cod into cubes. Slice the zucchini into half-rounds and halve the cherry tomatoes.
Step 2
Heat the wok over high heat with a drizzle of olive oil. Sear the cod cubes for 2 minutes on each side, then set aside.
Step 3
Stir-fry the zucchini and minced garlic in the wok for 3 minutes.
Step 4
Add the cherry tomatoes, olives, and Herbes de Provence. Return the cod and gently toss for 2 minutes.
