Turkish-Style Lamb Wok with Eggplants
Strips of lamb stir-fried with tender eggplants and tomatoes, fragrant with sumac. A flavorful and comforting Turkish-inspired sauté.

Ingredients
- 280 g boneless lamb leg
- 1 piece eggplant
- 2 piece tomatoes
- 1 tsp sumac
- 2 tbsp olive oil
- 1 bunch flat-leaf parsley
Instructions
Step 1
Cut the lamb into strips, the eggplant into cubes, and the tomatoes into wedges.
Step 2
Sear the lamb in the wok with olive oil for 3 minutes. Set aside.
Step 3
Stir-fry the eggplant cubes for 6 minutes until golden, add the tomatoes for 2 minutes.
Step 4
Return the lamb, sprinkle with sumac, garnish with parsley and serve.
