Cauliflower and Blue Cheese Soup with Walnuts
A silky roasted cauliflower soup enriched with creamy blue cheese and topped with crunchy walnuts. A classic French combination reinvented as a comforting soup.

Ingredients
- 400 g Cauliflower
- 80 g Blue cheese
- 1 piece Onion
- 400 ml Vegetable broth
- 30 g Walnut pieces
- 50 ml Crème fraîche
Instructions
Step 1
Cut the cauliflower into florets and chop the onion. Arrange on a baking sheet and roast at 200°C for 15 minutes.
Step 2
Transfer the roasted vegetables to a pot, add the broth, and bring to a boil. Simmer for 5 minutes.
Step 3
Blend until smooth. Stir in the crème fraîche and crumbled blue cheese over low heat.
Step 4
Serve topped with crushed walnut pieces.
