Carrot Soup with Walnuts and Curry with Chocolate Croutons
An original French-Asian fusion soup blending carrot purée, toasted walnuts and curry spices, served with sweet white chocolate croutons for an unexpected and refined gastronomic experience.
Ingredients
- 600 g Carrots
- 100 g Walnuts
- 60 g White chocolate
- 50 g Flour
- 70 g Butter
- 600 ml Water
- 100 ml Coconut milk
- 10 g Curry powder
- 5 g Salt
- 2 g Pepper
- 10 g Sugar
Instructions
Step 1
Peel and chop the carrots into pieces. Dry roast the walnuts in a skillet for 5 minutes.
Step 2
Melt the butter, add the flour and curry. Let cook for 2 minutes while stirring.
Step 3
Add the carrots, water and coconut milk. Simmer for 25 minutes until fully cooked.
Step 4
Blend everything finely with a blender. Season with salt and pepper.
Step 5
Melt the white chocolate with a little butter. Dip the whole walnuts in it and place on parchment paper.
Step 6
Pour the hot soup into bowls and garnish with the chocolate-coated walnuts. Serve immediately.
