Broccoli-Orange Soup with Dark Chocolate and Crispy Quinoa
A bold creation combining a sweet and savory broccoli and orange soup, topped with dark chocolate chips and roasted quinoa. A surprising and elegant culinary experience.
Ingredients
- 500 g Broccoli
- 2 piece Orange
- 400 ml Coconut milk
- 100 g Quinoa
- 60 g Dark chocolate
- 500 ml Vegetable broth
- 30 g Butter
- 20 g Honey
- 5 g Salt
- 2 g White pepper
Instructions
Step 1
Cook the quinoa for 15 minutes in salted water, then spread on a baking sheet and roast in the oven for 8 minutes.
Step 2
Cut the broccoli into small florets and cook in the broth for 12 minutes.
Step 3
Squeeze the oranges and collect the fresh juice.
Step 4
Blend the cooked broccoli with the coconut milk, fresh orange juice, and butter until smooth.
Step 5
Stir the honey into the soup, season with salt and pepper to taste.
Step 6
Pour the soup into bowls and garnish with crispy quinoa and grated dark chocolate shavings.
