Broccoli and Cauliflower Soup with Lentils
A savory and creamy soup combining broccoli, cauliflower, and cooked lentils, finished with a hint of mustard. A comforting French classic.

Ingredients
- 300 g Broccoli
- 300 g Cauliflower
- 150 g Red lentils
- 1 l Water
- 1 tbsp Mustard
- 30 g Butter
- 5 g Salt
- 2 g Pepper
Instructions
Step 1
Cut broccoli and cauliflower into small florets, rinse the lentils.
Step 2
Melt the butter in a pot, add the broccoli and cauliflower.
Step 3
Pour in the water, add the lentils, and bring to a boil.
Step 4
Simmer for 20 minutes until the vegetables are tender.
Step 5
Blend the soup with the mustard, season with salt and pepper.
Step 6
Serve hot with a drizzle of fresh butter on top.
