Creative Velouté: Apple, Clementine, and Broccoli Espuma with Sweet-Savory Granola
A French-Asian gastronomic creation combining the tangy flavor of clementines with roasted broccoli. Served as an airy espuma with homemade sweet-savory granola to contrast the textures.
Ingredients
- 250 g Broccoli
- 200 g Potatoes
- 4 piece Clementines
- 2 piece Kiwis
- 60 g Oat flakes
- 40 g Walnuts
- 20 g Honey
- 60 g Butter
- 400 ml Water
- 100 ml Crème fraîche
- 30 ml Olive oil
- 5 g Fresh thyme
- 3 g Fleur de sel
Instructions
Step 1
Prepare the granola: mix oat flakes, chopped walnuts, honey, and butter. Bake for 15 minutes at 180°C.
Step 2
Cut the broccoli into florets and the potatoes into cubes. Roast in the oven for 20 minutes with oil and thyme.
Step 3
Squeeze the clementines and reserve the juice. Boil the broccoli and potatoes for 12 minutes.
Step 4
Blend the cooked vegetables with clementine juice, crème fraîche, and water until very smooth.
Step 5
Pour the velouté into glasses, sprinkle with granola, and garnish with thin kiwi slices.
