Stir-Fried Eggs with Crispy Vegetables, Chinese Style
Scrambled eggs in a wok with snow peas and bok choy, flavored with fresh ginger. Simple, filling, and ready in a flash.

Ingredients
- 6 piece Eggs
- 150 g Snow peas
- 200 g Bok choy
- 10 g Fresh ginger
- 1 tbsp Sunflower oil
Instructions
Step 1
Beat the eggs in a bowl. Cut the bok choy in half lengthwise, remove the stems from the snow peas, and grate the ginger.
Step 2
Heat the oil in a wok over high heat. Stir-fry the snow peas and bok choy for 3 minutes with the ginger.
Step 3
Push the vegetables to the side of the wok, pour in the beaten eggs, and scramble for 2 minutes while gradually incorporating the vegetables.
Step 4
Serve immediately, season generously with pepper.
