Scrambled Eggs with Smoked Salmon and Asparagus
Creamy scrambled eggs mixed with strips of smoked salmon and tender asparagus tips. An elegant and nourishing Scandinavian brunch.

Ingredients
- 5 piece Eggs
- 120 g Smoked salmon
- 200 g Green asparagus
- 60 g Fresh spinach
- 2 tbsp Crème fraîche
- 1 bunch Fresh dill
Instructions
Step 1
Cut the asparagus into 3 cm pieces and blanch for 3 minutes in boiling water. Drain.
Step 2
Beat the eggs with the crème fraîche and chopped dill.
Step 3
Pour the eggs into a pan over low heat and stir gently. Add the spinach and asparagus halfway through cooking.
Step 4
When the eggs are still creamy, remove from heat, arrange the smoked salmon strips on top and serve.
