Cuban Tostones
Green plantains mashed and fried twice until golden and crispy discs. Served with a spicy garlic sauce.

Ingredients
- 4 piece Green plantains
- 500 ml Vegetable oil
- 8 clove Garlic
- 8 g Salt
- 2 g Cayenne pepper
- 30 ml Lemon juice
Instructions
Step 1
Peel and cut the plantains into 2cm thick slices
Step 2
Heat the oil to 170°C and fry the slices for 5 minutes until tender
Step 3
Remove and flatten each slice between two sheets of plastic wrap to form a flat disc
Step 4
Return to the fryer for 3-4 minutes until crispy and golden
Step 5
Mash the garlic with salt and lemon juice to make a mojo sauce. Serve with the tostones
