Spanish Tortilla with Sardines and Peppers
A thick, fluffy tortilla studded with canned sardines, roasted peppers, and caramelized onions. A rustic Iberian dish rich in omega-3s.

Ingredients
- 6 pieces Eggs
- 2 cans Sardines in olive oil
- 1 large Red bell pepper
- 1 medium Onion
- 1 tsp Smoked paprika
- 2 tbsp Olive oil
Instructions
Step 1
Thinly slice the onion and cut the bell pepper into strips. Drain the sardines and break them into chunks.
Step 2
Sauté the onion and bell pepper in olive oil over medium heat for 6 minutes.
Step 3
Beat the eggs with the smoked paprika, salt, and pepper. Stir in the broken sardines.
Step 4
Pour the mixture over the vegetables in the skillet. Cook 5 minutes over low heat covered, then flip and cook 3 minutes on the other side.
