Spanish Tortilla with Chorizo and Zucchini
A thick and creamy potato-free tortilla loaded with sliced chorizo and golden zucchini rounds. A low-carb twist on this Spanish classic.

Ingredients
- 6 piece Eggs
- 100 g Mild chorizo
- 2 piece Zucchini
- 1 piece Onion
- 2 tbsp Olive oil
Instructions
Step 1
Slice the zucchini into thin rounds, mince the onion and slice the chorizo into rounds.
Step 2
Sauté the onion and zucchini in olive oil over medium heat for 6 minutes. Add chorizo and cook for 2 minutes.
Step 3
Beat the eggs, season with salt and pepper. Pour over vegetables and chorizo in the pan.
Step 4
Cook over low heat for 8 minutes. Flip the tortilla using a plate and cook for 2 minutes on the other side.
