Tom Yum Goong (Thai Shrimp Soup)

Ingredients
- 250 g shrimp
- 500 ml chicken stock
- 150 g shiitake mushrooms
- 2 piece lemongrass stalk
- 20 g fresh galangal
- 2 piece red chili
- 2 piece lime
- 2 tbsp fish sauce
- 100 ml coconut milk
- 15 g cilantro leaves
- 15 g mint leaves
Instructions
Step 1
Lightly crush the lemongrass stalk and cut the galangal, mushrooms, and chilies into pieces.
Step 2
Bring the stock to a boil, add lemongrass and galangal.
Step 3
Infuse for 3 minutes, then add mushrooms and chili, cook for 4 minutes.
Step 4
Add the shrimp and cook for 3 minutes until they turn pink.
Step 5
Pour in fish sauce and lime juice, stir to combine.
Step 6
Remove from heat, add coconut milk and garnish with fresh cilantro and mint.
