Lighter Tom Kha Gai
The famous Thai coconut and galangal soup with tender chicken and mushrooms. Creamy and fragrant without the carbs.

Ingredients
- 350 g Chicken breasts
- 400 ml Light coconut milk
- 150 g Button mushrooms
- 100 g Cherry tomatoes
- 1 piece Fresh galangal
- 2 stem Lemongrass
- 2 tbsp Fish sauce
Instructions
Step 1
Slice the chicken into thin strips. Quarter the mushrooms and halve the cherry tomatoes. Crush the lemongrass and slice the galangal.
Step 2
Bring the coconut milk to a gentle simmer with the lemongrass and galangal. Let infuse for 5 minutes.
Step 3
Add the chicken and mushrooms. Cook for 8 minutes over low heat.
Step 4
Add the cherry tomatoes and fish sauce. Heat for 2 minutes and serve with a squeeze of lime.
