Smoked Tofu Roasted with Za'atar and Mediterranean Vegetables
Smoked tofu seasoned with za'atar and roasted in the oven with tomatoes, zucchini, and red onions. A fragrant and colorful Levantine-inspired dish.

Ingredients
- 300 g Smoked tofu
- 1 piece Zucchini
- 2 pieces Tomatoes
- 1 piece Red onion
- 2 tsp Za'atar
- 1 tbsp Olive oil
Instructions
Step 1
Preheat the oven to 210°C. Cut the smoked tofu into cubes, the zucchini into rounds, the tomatoes into quarters, and the onion into slices.
Step 2
Mix all ingredients with olive oil and za'atar on a baking sheet.
Step 3
Bake for 22 minutes, stirring halfway through, until the tofu is crispy and the vegetables are roasted.
