Sophisticated Beet-Avocado-Walnut Open-faced Sandwich with Tangy Kiwi

Ingredients
- 200 g Beets
- 1 piece Avocado
- 2 piece Kiwis
- 40 g Walnuts
- 4 slice Whole wheat bread
- 1 tbsp Mustard
- 1 tbsp Olive oil
- 1 tbsp Fresh lemon juice
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Blend the cooked beets with mustard and oil to form a spread.
Step 2
Mash the avocado with a fork and lemon juice.
Step 3
Roughly chop the walnuts.
Step 4
Peel and thinly slice the kiwis.
Step 5
Lightly toast the bread.
Step 6
Assemble: spread beet mixture, then avocado, garnish with walnuts and kiwis.
