Caramelized Sweet Potato and Orange Tarte Tatin
A creative take on Tarte Tatin featuring caramelized potatoes and sautéed oranges, served with chocolate coulis and a light coconut milk ganache.
Ingredients
- 600 g Potatoes
- 3 piece Oranges
- 150 g Dark chocolate
- 200 ml Coconut milk
- 120 g Sugar
- 80 g Butter
- 250 g Puff pastry
- 40 ml Honey
- 50 ml Water
- 2 g Salt
Instructions
Step 1
Peel and slice the potatoes thinly (2-3mm) using a mandoline.
Step 2
Peel the oranges and slice them thinly. Carefully remove any seeds.
Step 3
Make a caramel in a skillet with sugar and water. Add butter and honey. Cook until golden brown.
Step 4
Arrange the potato slices and orange slices overlapping beautifully in the caramel.
Step 5
Cover with puff pastry, tucking the edges in well. Bake at 200°C for 25 minutes.
Step 6
Melt the chocolate with coconut milk to create a ganache. Let cool slightly.
Step 7
Unmold the tart onto a serving plate by carefully inverting it. Serve with the chocolate coulis on the side.
