Apple Tarte Tatin with Chocolate and Walnut Sauce
A refined French dessert reinvented: caramelized apples on a crispy walnut and flour base, served with a rich, velvety chocolate sauce.
Ingredients
- 8 piece apples
- 180 g flour
- 180 g sugar
- 80 g walnuts
- 150 g dark chocolate
- 150 g butter
- 100 ml crème fraîche
- 50 ml water
- 1 pod vanilla
- 1 pinch salt
Instructions
Step 1
Make the shortbread dough: mix 100g flour, 80g sugar, 100g cold butter cut into cubes and a pinch of salt.
Step 2
Stir in the ground walnuts and form the dough into a disk, then refrigerate.
Step 3
Peel and quarter the apples, then arrange them in a rosette pattern in a skillet with 50g butter and 100g caramelized sugar.
Step 4
Cook the apples over medium-high heat until golden, about 10 minutes.
Step 5
Place the dough on top of the apples and bake in a 190°C oven for 20 minutes until golden.
Step 6
While baking, prepare the sauce: melt the chocolate with crème fraîche and vanilla seeds.
Step 7
Unmold the tart onto a serving plate and serve hot with the chocolate sauce.
