Tomato and Poached Egg Tartare, Mexican Style
A fresh tomato tartare with jalapeño, cilantro, and lime, topped with a creamy poached egg. Spicy and protein-packed.

Ingredients
- 400 g tomatoes
- 2 piece eggs
- 1 piece red onion
- 1 piece jalapeño
- 1 bunch fresh cilantro
- 1 piece lime
- 1 tbsp olive oil
Instructions
Step 1
Dice the tomatoes into small cubes. Finely mince the red onion and jalapeño (remove seeds to taste). Chop the cilantro.
Step 2
Mix together the tomatoes, onion, jalapeño, cilantro, lime juice, and olive oil. Season to taste.
Step 3
Poach the eggs for 3-4 minutes in gently simmering vinegared water. Plate the tartare and top each portion with a poached egg.
