Silken Tofu Tartare with Sundried Tomatoes and Basil
A creamy tartare of silken tofu mixed with sundried tomatoes and fresh basil, served on thin slices of raw zucchini. A light and flavorful Italian-inspired dish.

Ingredients
- 300 g silken tofu
- 50 g sundried tomatoes
- 15 g fresh basil
- 1 piece zucchini
- 1 tbsp olive oil
- 20 g pine nuts
Instructions
Step 1
Mash the silken tofu with a fork. Finely chop the sundried tomatoes and chiffonade the basil.
Step 2
Mix the tofu with the sundried tomatoes, basil, and olive oil. Season with salt and pepper.
Step 3
Slice the zucchini into thin rounds using a mandoline. Arrange the tartare on the zucchini slices and sprinkle with pine nuts.
