Scallop Tartare with Vanilla and Citrus
Fresh scallops of incomparable quality, diced and flavored with vanilla and pink grapefruit. A refined tartare with French inspiration.

Ingredients
- 300 g Fresh scallop meat
- 1 piece Pink grapefruit
- 1 piece Vanilla pod
- 6 piece Radishes
- 10 g Chives
- 1 tbsp Olive oil
Instructions
Step 1
Dice the scallops into small regular 5 mm cubes. Place them in a cold bowl.
Step 2
Cut the grapefruit segments into dice. Split the vanilla pod and scrape out the seeds. Slice the radishes thinly and chop the chives.
Step 3
Mix the scallops with the grapefruit, vanilla seeds, olive oil, and radishes. Arrange in molds and garnish with chives.
