Lebanese-Style Green Lentil Tartare
A crunchy lentil tartare made with green lentils mixed with fresh mint, parsley and tomatoes, dressed with lemon and olive oil. Inspired by Lebanese tabbouleh, with extra protein.

Ingredients
- 150 g green lentils
- 2 piece tomatoes
- 1 piece cucumber
- 15 g fresh mint
- 20 g flat parsley
- 1 piece lemon
- 2 tbsp olive oil
Instructions
Step 1
Cook the green lentils in boiling salted water for 18-20 minutes. Drain and let cool.
Step 2
Cut the tomatoes and cucumber into small dice. Chop the mint and parsley finely.
Step 3
Mix the cooled lentils with the vegetables, herbs, lemon juice and olive oil. Season and serve.
