Thai-Style Shrimp Tartare
Raw shrimp finely chopped by hand, seasoned with lemongrass, ginger and lime, topped with cucumber and fresh mint. A tartare with enchanting flavors of Southeast Asia.

Ingredients
- 400 g Raw peeled shrimp
- 1 stalk Lemongrass
- 1 piece Cucumber
- 10 g Fresh mint
- 2 pieces Lime
- 1 tbsp Fish sauce (nuoc-mâm)
- 10 g Fresh ginger
Instructions
Step 1
Finely chop the raw shrimp with a knife into small pieces but not into a paste. Place in a cold bowl.
Step 2
Slice the lemongrass and ginger very thinly. Cut the cucumber into small dice. Chiffonade the mint.
Step 3
Mix the shrimp with the lemongrass, ginger, lime juice and fish sauce. Add the cucumber and mint. Plate using a ring mold.
