Mushroom Tartare with Whole Grain Mustard and Poached Egg
Finely chopped button mushroom tartare, enhanced with whole grain mustard and capers, topped with a silky poached egg. An elegant and protein-rich appetizer.

Ingredients
- 300 g button mushrooms
- 2 pieces eggs
- 1 tbsp whole grain mustard
- 20 g capers
- 1 piece shallot
- 2 tbsp walnut oil
- 30 g crushed walnuts
Instructions
Step 1
Rinse and finely chop the mushrooms with a knife. Mince the shallot very finely.
Step 2
Mix the chopped mushrooms with the shallot, mustard, drained capers, and walnut oil. Season with salt and pepper.
Step 3
Poach the eggs in simmering vinegared water for 3-4 minutes.
Step 4
Arrange the tartare in molds, place a poached egg on each portion and sprinkle with crushed walnuts.
