Beet and Avocado Tartare with Crispy Oat Flakes
A sophisticated modern creation combining earthy French beets with exotic avocado, crowned with golden oat flakes and pumpkin seeds. A refined and healthy dish.

Ingredients
- 400 g Beets
- 2 piece Avocado
- 60 g Oat flakes
- 20 g Butter
- 1 tbsp Mustard
- 1 piece Fresh lemon
- 50 g Pumpkin seeds
- 3 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the beets in boiling water for 20 minutes, then cool and cut into small cubes.
Step 2
Toast the oat flakes in a pan with butter for 5 minutes until golden.
Step 3
Halve the avocados, remove the pit and cut into cubes.
Step 4
Mix the beet cubes with mustard, olive oil, lemon juice, salt and pepper.
Step 5
Arrange the beet tartare in the avocado halves.
Step 6
Top with toasted oat flakes and pumpkin seeds.
