Avocado Tartare with Mimosa Eggs and Radishes
Creamy avocado tartare brightened with lemon, topped with crumbled hard-boiled eggs mimosa-style, and accompanied by crisp radishes. A fresh and satisfying dish.

Ingredients
- 2 piece avocados
- 4 piece eggs
- 8 piece radishes
- 1 piece lemon
- 10 g chives
- 1 tbsp olive oil
Instructions
Step 1
Cook the eggs hard-boiled for 10 minutes in boiling water, then cool them under cold water.
Step 2
Cut the avocados into small dice and drizzle with lemon juice. Slice the radishes into thin rounds.
Step 3
Peel the eggs, separate whites and yolks. Finely chop the whites and mash the yolks with a fork.
Step 4
Arrange the avocado tartare in rings, cover with chopped whites, then crumbled yolks. Garnish with radishes and fresh chives.
