Tamagoyaki with Salmon and Cucumber
A Japanese rolled omelet filled with flaked fresh salmon and crispy cucumber, flavored with soy sauce. A light and elegant Japanese breakfast dish.

Ingredients
- 6 pieces eggs
- 150 g fresh salmon fillet
- 1 medium cucumber
- 3 stems green onion
- 1 tbsp soy sauce
- 1 tbsp mirin
Instructions
Step 1
Steam or pan-fry the salmon fillet for 5 minutes, then flake it with a fork.
Step 2
Grate the cucumber and squeeze out the excess moisture. Slice the green onions.
Step 3
Beat the eggs with soy sauce and mirin. Fold in the cucumber and green onions.
Step 4
In an oiled pan over medium heat, pour a thin layer of egg mixture, add salmon, and roll. Repeat 3-4 times until all the mixture is used.
