Lamb Tagine with Dried Apricots
A traditional Algerian stew with sweet and savory flavors, combining tender lamb with dried apricots, almonds, and warm spices. Served over fluffy couscous.

Ingredients
- 800 g Lamb
- 150 g Dried apricots
- 2 piece Onions
- 100 g Whole almonds
- 15 g Fresh ginger
- 5 g Turmeric
- 3 g Cinnamon
- 60 ml Olive oil
- 500 ml Vegetable broth
- 300 g Couscous
- 5 g Salt and pepper
Instructions
Step 1
Cut the lamb into even cubes and slice the onions into thin rings.
Step 2
Heat the olive oil in a tagine or Dutch oven and sear the lamb pieces.
Step 3
Add the onions, grated ginger, and spices (turmeric and cinnamon).
Step 4
Pour in the vegetable broth and add the dried apricots.
Step 5
Cover and simmer for 40 minutes until the lamb is tender.
Step 6
Meanwhile, prepare the couscous according to package directions.
Step 7
Sprinkle with toasted almonds when serving and accompany with couscous.
