Lamb Tagine with Dried Apricots

Ingredients
- 800 g Lamb
- 150 g Dried apricots
- 2 pieces Onions
- 3 cloves Garlic
- 15 g Fresh ginger
- 1 tsp Cumin
- 1 tsp Ground coriander
- 0.5 tsp Cinnamon
- 3 tbsp Olive oil
- 500 ml Vegetable broth
- 1 tsp Salt
- 0.5 tsp Pepper
Instructions
Step 1
Cut the lamb into 4 cm cubes
Step 2
Slice the onions and mince the garlic and ginger
Step 3
Heat the olive oil in a tagine or Dutch oven and brown the meat
Step 4
Add the onions, garlic, and ginger, cook for 3 minutes
Step 5
Add the spices and mix well
Step 6
Pour in the broth, add the dried apricots, season with salt and pepper
Step 7
Simmer covered for 40-45 minutes until the meat is tender
