Vegetarian Tacos with Vegetables and Beans
Delicious tacos filled with fresh vegetables, red beans and Mexican spices. Simple and tasty filling.

Ingredients
- 6 pieces Corn tortillas
- 200 g Carrots
- 100 g Celery
- 200 g Red beans
- 1 piece Onions
- 1 tsp Cumin
- 0.5 tsp Paprika
- 2 tbsp Oil
- 100 g Greek yogurt
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and thinly slice the onion, cut the carrots and celery into small dice.
Step 2
Heat the oil in a skillet and sauté the onion for 2 minutes.
Step 3
Add the carrots, celery, cumin and paprika, cook for 8 minutes.
Step 4
Add the red beans, mix well and let heat for 3 minutes.
Step 5
Adjust the seasoning with salt and pepper.
Step 6
Warm the tortillas briefly in the skillet.
Step 7
Fill each tortilla with the mixture and a dollop of Greek yogurt.
