Vegetarian Bean and Avocado Tacos
Delicious Mexican tacos filled with spiced red beans, fresh tomatoes, and creamy avocado. Customize with your favorite toppings for a colorful and satisfying meal.
Ingredients
- 4 pieces Wheat tortillas
- 400 g Canned red beans
- 200 g Tomatoes
- 2 pieces Avocados
- 80 g Comté cheese
- 1/2 piece Onion
- 1 piece Lime
- 1 tsp Espelette pepper
- 1 tbsp Oil
- à volonté g Salt
- à volonté g Pepper
Instructions
Step 1
Drain the red beans and pour into a skillet with a little oil. Add the Espelette pepper and finely chopped onion.
Step 2
Heat for 5 minutes, lightly mashing the beans with a spoon to thicken them.
Step 3
Meanwhile, dice the tomatoes, slice the avocados, and drizzle with lime juice to prevent browning.
Step 4
Warm the tortillas for a few seconds in a dry skillet or microwave.
Step 5
Assemble the tacos: spread the beans on a tortilla, add the tomatoes and avocado, and sprinkle with grated Comté.
Step 6
Serve immediately with an extra squeeze of lime juice if desired.
