Tabbouleh
A fresh Levantine salad made with bulgur, tomatoes, cucumber, fresh parsley, and mint. Brightened with lemon and olive oil.

Ingredients
- 150 g Bulgur
- 300 g Cherry tomatoes
- 1 piece Cucumber
- 100 g Fresh parsley
- 50 g Fresh mint
- 0.5 piece Red onion
- 80 ml Fresh lemon juice
- 60 ml Extra virgin olive oil
- 300 ml Hot water
- 0.75 tsp Salt
- 0.25 tsp Black pepper
Instructions
Step 1
Pour hot water over the bulgur in a bowl, cover, and let sit for 5 minutes until hydrated.
Step 2
Finely chop the parsley and mint. Dice the tomatoes and cucumber. Thinly slice the red onion.
Step 3
In a large bowl, combine the cooled bulgur with tomatoes, cucumber, onion, parsley, and mint.
Step 4
Make the vinaigrette by whisking together lemon juice, olive oil, salt, and pepper. Pour over the salad.
Step 5
Mix well and let rest for 5 minutes before serving so the flavors can meld.
