Asparagus and Tomato Stir-Fry with Noodles in Soy-Ginger Sauce
A quick and delicious Asian dish: asparagus and tomatoes sautéed with ginger and soy sauce, served over crispy noodles.

Ingredients
- 250 g Asparagus
- 2 piece Tomato
- 150 g Egg noodles
- 3 tbsp Soy sauce
- 10 g Ginger
- 2 clove Garlic
- 2 tbsp Oil
- 1 L Water
- 1 pinch Pepper
Instructions
Step 1
Cook the noodles according to package directions, then drain.
Step 2
Cut the asparagus on the bias and the tomatoes into quarters. Grate the ginger and mince the garlic.
Step 3
Heat the oil in a skillet or wok over high heat.
Step 4
Stir-fry the garlic and ginger for 1 minute, then add the asparagus.
Step 5
Add the tomatoes and soy sauce, cook for 4 minutes.
Step 6
Toss with the noodles, season with pepper, and serve hot.
