Spaghetti Aglio e Olio with Olives
Authentic garlic and oil spaghetti, elevated with olives and sautéed carrots for extra flavor. A simple Italian classic done right.

Ingredients
- 250 g Spaghetti
- 100 g Olives
- 2 piece Carrots
- 4 tbsp Olive oil
- 1 tsp Salt
- 1 tsp Pepper
Instructions
Step 1
Fill a pot with salted water and bring to a boil.
Step 2
Cut the carrots into thin julienne.
Step 3
Heat the olive oil in a pan over medium heat and add the julienned carrots. Cook for 5 minutes.
Step 4
Add the pitted olives to the pan and cook for 2-3 more minutes.
Step 5
Cook the spaghetti al dente according to package instructions.
Step 6
Drain the pasta, reserving a glass of cooking water. Toss the pasta with the pan contents. Add some cooking water if needed. Season to taste.
