Simplified Spaghetti Carbonara
A lighter carbonara made with readily available ingredients—ham, Gruyère, and eggs—for a creamy and flavorful sauce.

Ingredients
- 200 g Spaghetti
- 100 g Ham
- 80 g Grated Gruyère
- 2 piece Eggs
- 1 tbsp Olive oil
- 2 l Water
- À goût Salt
- À goût Pepper
Instructions
Step 1
Bring salted water to a boil in a pot and cook the spaghetti according to package directions.
Step 2
Cut the ham into small pieces.
Step 3
Whisk the eggs in a bowl with the grated Gruyère, salt, and pepper.
Step 4
Sauté the ham in a pan with olive oil for 2 minutes.
Step 5
Drain the spaghetti, reserving 100ml of cooking water.
Step 6
Off the heat, quickly combine the spaghetti with the ham, add the egg mixture and a splash of cooking water to create a creamy sauce.
Step 7
Serve immediately with fresh pepper.
