Grilled Lamb Chops with Eggplant and Mint
Tender lamb slices paired with grilled eggplant and a yogurt-mint sauce. A welcoming Turkish dish packed with flavor.
Ingredients
- 6 piece lamb chops
- 2 piece eggplants
- 2 piece tomatoes
- 100 g Greek yogurt
- 1 bunch fresh mint
- 2 tbsp olive oil
- 1 tsp sumac
Instructions
Step 1
Slice the eggplants into 1 cm rounds and halve the tomatoes. Salt the eggplants and let them sit for 5 minutes to release excess moisture.
Step 2
Prepare the sauce by mixing the Greek yogurt, chopped mint, and sumac. Chill until ready to serve.
Step 3
Oil and grill the eggplant slices for 4 minutes on each side and the tomatoes for 3 minutes. Set aside.
Step 4
Season the lamb chops with salt and pepper. Grill over high heat for 3 to 4 minutes per side depending on thickness.
Step 5
Arrange the grilled vegetables on a plate, place the lamb chops on top, and drizzle with the yogurt-mint sauce.
