Cold Tomato and Cucumber Soup
A gazpacho-inspired soup from Mediterranean cuisine, perfect for summer: blended tomatoes and cucumbers for a fresh and light dish.

Ingredients
- 400 g Tomato
- 300 g Cucumber
- 200 ml Water
- 2 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cut the tomatoes and cucumber into pieces and place them in a blender.
Step 2
Add water, olive oil, salt and pepper. Blend until smooth.
Step 3
Pour into bowls and serve chilled with a drizzle of olive oil.
