Comforting Carrot, Cauliflower, and Quinoa Soup
A creamy and nutritious soup with seasonal vegetables and quinoa for added fullness. Healthy yet satisfying.

Ingredients
- 300 g Carrots
- 250 g Cauliflower
- 100 g Quinoa
- 1 l Water
- 2 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and slice the carrots into rounds. Cut the cauliflower into small florets.
Step 2
Sauté the vegetables in olive oil in a pot over medium heat for 3 minutes.
Step 3
Add the quinoa and water. Bring to a boil, then simmer for 15 minutes over medium-low heat.
Step 4
Blend half of the soup with an immersion blender for a creamy texture. Season with salt and pepper.
